Zucchini Noodles

Looking for a low calorie, low carb alternative to pasta?  Try zucchini noodles!

I got a new julienne peeler today and tried it out on a zucchini.  You just run the peeler down the length of the zucchini like you are peeling it, and the strands of zucchini fall off.  Then you just use the zucchini like you would cooked pasta.

Tonight I sauteed some onions in olive oil till softened, then threw in the zucchini.  Stir fried with some salt, pepper, and garlic seasoning until crisp tender and then plate.  Yummy!

The possiblities for these “noodles” are endless.  You could serve them like spaghetti with a meat sauce, stir into soups, or just serve with butter and have buttered noodles.
