I love cooking with color. When I see a variety of different colors I just know I am eating healthy!
I had some veggies that were ready to eat now so I decided to sautee them up. Just diced, tossed in some olive oil and a sprinkle of spices like italian seasoning, garlic powder, salt and pepper. Cook just until softened and lightly browned.
I will use some veggies for a quick homemade pizza for dinner. Just take a tortilla, spread on some pizza sauce and top with the veggies and a sprinkling of cheese. Pop in oven till brown and dinner is ready! The boys are finishing leftovers of roasted chicken or penne pasta.
The veggies have endless possibilities. They can be used in an omelet for breakfast, into soup for lunch, or even over a baked potato for dinner! Click on the picture for a close up of all the wonderful colors!
