Happy St. Patricks Day! The one day of the year that I make corned beef. I don’t know why I don’t make it any other time of the year. It’s very easy to cook in the crock pot, and the boys love it. I am making a note to check for it in the stores throughout the year so a good Irish dinner doesn’t happen only once a year!
I trimmed the corned beef of any excess fat and put into my crock pot. I covered the meat with water and sprinkled the seasoning packet over the meat. Cooked for about 6 – 8 hours on low in the crockpot. About 1 hour before it was done I added a can of sauerkraut with their juices.
Took the corned beef out, let rest and then cut against the grain. I boiled some red potatoes, diced and tossed with some butter and fresh chives from my garden. It has been an abnormally warm winter here in Pittsburgh and my chives are sprouting up. Couldn’t resist snipping some and tossing onto the potatoes.
Steamed up some frozen corn on the cob that I had from last summer to round out the meal. Overall a perfect Irish dinner – from a Polish/Ukranian cook 🙂 Click the picture for a close up.
