Dinner tonight is broiled pork chops, rice, and parmesan zucchini. The pork chops were really thick so I marinated them all day in Italian dressing to keep them tender. I then popped them in the oven then turned on the broiler to brown them up.
Rice for the boys tonight but I wanted to stay away from grains/carbs so I went to the veggie crisper and found a nice size zucchini and decided that since the oven was on anyways, to bake it up. I thinly sliced the zucchini on my mandolin then lined an oiled pie plate. I then covered with grated Parmesan cheese and popped in the oven and cooked till browned.
The parmesan zucchini would be great for breakfast or even a light lunch. I can see adding some sliced tomatoes and/or some eggs – the possiblities are endless!
